\u201cIt\u2019s not a scam!\u201d she said during an E! News interview alongside her Vanderpump Rules castmate Scheana Shay. \u201cThere is a location, 100% there is a location. It exists. There\u2019s a door you can walk through.\u201d<\/p>\n
Katie and her business partner, Ariana Madix, have spent the past several years working on the WeHo eatery, which was expected to open in 2023. Although the pair has taken huge steps in building the business \u2014 such as securing a location and hiring staff members \u2014 the extensive delay has caused many to wonder if the restaurant plans will ever come to fruition.<\/p>\n
Katie and Ariana have repeatedly claimed that the sandwich shop opening was out of their hands, as they were waiting on city officials to grant the necessary permits.<\/p>\n
“We had to rip out an entire patio,\u201d Katie explained. \u201cSo we\u2019ve had to get a whole new awning made, we\u2019ve had to get new permits for that, [and] that took forever. Public Works and Safety, they just \u2014 talk to them. I\u2019ll give you their phone number if you want to talk to them and ask [what the hold up is].\u201d<\/p>\n
Katie\u00a0said she didn\u2019t want to share a time frame for the restaurant\u2019s launch, but reassured fans it was happening \u201csoon.\u201d<\/p>\n
\u201cWe are so dangerously close, and I mean that in a really positive way,\u201d she continued.\u00a0\u201cI know it\u2019s been a really long time coming and that\u2019s felt by everyone that asks me that question. But, I mean, if we could\u2019ve opened six months ago, we absolutely would\u2019ve. But it\u2019s completely out of our hands. But we\u2019re hiring right now and will be training very soon and it\u2019s right around the corner. I don\u2019t want to share a date but very, very soon.\u201d<\/p>\n

Katie said the process of opening a sandwich shop has been very “illuminating” but quite difficult. However, she was excited to reveal all the hard work that went into the shop.<\/p>\n
\u201cWe don\u2019t have the awning up just yet but I saw some plans for it yesterday,\u201d she continued. \u201cThis is not for the faint of heart\u2026\u00a0There\u2019s so many things. The inside is really beautiful. I\u2019m really excited about it. We got a new awning, a new sign, there\u2019s lights. It\u2019s super cute.\u201d<\/p>\n
Katie and Scheana then turned their direction to the current season of\u00a0Vanderpump Rules.<\/em>\u00a0The former SURvers said this Season 11 has been \u201cvery dark\u201d because the cast is still reeling from Ariana\u2019s shocking breakup with\u00a0Tom Sandoval.<\/p>\n “I just feel, like, very solemn all the time. It just feels, like, heavy a lot,\u201d Katie said. \u201cI don\u2019t want tumultuous arguments and fighting.\u201d<\/p>\n Scheana agreed: \u201cThat\u2019s tough to navigate when I try to be a positive, happy, light person.
